Italian Style Mussels

ingredients
1kg fresh mussels, scrubbed and de-bearded
1 jar bippi chilli sugo
1 garlic clove, diced
1 small red chilli
1 bay leaf, fresh
1/2 cup dry white wine
1/2 cup brown onion, diced
1 cup parsley, chopped
2 tbsp olive oil
METHOD
place onions and olive oil in a large cold pot over medium heat until translucent.
add chilli, garlic, and bay leaf and fry for 30 seconds.
add mussels and increase heat to high. mix to combine, then add white wine and give the pot a good shake. leave for about 30 seconds. add the chilli sugo and stir. place the lid on the pot and leave to cook for 3-5 minutes, shaking the pot occasionally.
remove any mussels that open and place in a separate dish. continue to do so as the mussels open, and discard any that remain closed.
lower the heat to medium and continue to simmer the sauce to thicken (5-10 mins).
once the sauce is at your desired thickness, add the mussels back in the pot and turn off the heat. add parsley. enjoy!
