Chilli Honey Sugo & Pepperoni Focaccia

ingredients
Focaccia:
450ml warm water
8g dry active yeast
1 tsp salt
1 tsp sugar
4 tbsp olive oil
550g 00 flour
Toppings:
chilli honey sugo
pepperoni
mozzarella, shredded & fresh
jalapenos (optional)
fresh basil
honey to drizzle
METHOD
mix warm water, yeast, sugar, and salt into a bowl. Let sit for 5-10 mins until foamy.
in a large bowl, add flour, then pout in yeast mixture and olive oil. stir until sticky dough forms.
drizzle a bit more olive oil over the dough. cover with cling wrap and a tea towel. allow to rise somewhere warm for 1-2 hours, until doubled in size.
once risen, transfer dough to well-oiled tray and gently press out to the edges of the tray with your fingertips.
cover again and let rise for another 30-60 minutes.
preheat oven to 180 degrees.
top with chilli honey sugo, shredded mozzarella, pepperoni, and jalapenos. bake for 30-35 mins or until golden and puffed.
with 5 minutes left, scatter bits of torn fresh mozzarella over the focaccia and pop back into oven to melt.
finish with fresh basil and a drizzle of honey.
