Vodka Gnocchi Alla Sorrentina

1 jar Bippi Vodka Sauce
500g gnocchi
200g cooking cream
200g mozzarella, torn or shredded
Small handful fresh basil, plus extra to serve
Pinch of salt, to taste
METHOD
Preheat your oven grill to high. Bring a large pot of salted water to the boil and cook the gnocchi according to packet instructions. Once they float to the surface, they’re ready—drain and set aside.
In an ovenproof frying pan or baking dish, gently heat the vodka sauce over medium heat. Stir through the cream until smooth, glossy, and heated through.
Add the cooked gnocchi straight into the sauce, along with a handful of chopped basil. Toss everything together so the gnocchi is well coated. Taste and season with a pinch of salt if needed.
Scatter the mozzarella over the top, then place under the grill for 5–10 minutes, or until the cheese is melted, golden, and bubbling. Keep a close eye on it so it doesn’t catch.
Remove from the oven, finish with fresh basil, and serve immediately while it’s hot and gooey.
