Bippi Bomba Chicken Melt

ingredients

  • 6 chicken tenderloins

  • 3 tbsp Bippi Bomba Spicy Spread (eggplant, mushroom, artichoke & chilli)

  • 3 tbsp whole Mayonnaise

  • 1 stone baked Pane Di Casa loaf, sliced open in half lengthways

  • 3-4 sun-dried tomatoes, chopped

  • 1 cup grated mozzarella (or provolone

  • 2-3 tbsps Grated Parmesan

  • Olive oil

chicken seasoning

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp salt

  • 1 tbsp Bibbi Italian Bomba

METHOD

  1. Season the chicken tenderloins with paprika, garlic powder, onion powder, oregano, salt and add Bippi Italian Bomba.

  2. Pan-fry in a little olive oil until golden and cooked through.

  3. Slice open the loaf in half lengthways and spread the mayonnaise over the cut side.

  4. Next, Spread Bippi Bomba Spicy Spread generously on top of the mayonnaise.

  5. Sprinkle plenty of mozzarella.

  6. Layer the cooked chicken and sun-dried tomato over the top.

  7. Grate some Parmesan on top and a few small dollops of Bippi Italian Bomba.

  8. Plus under the grill or in the oven until the cheese melts and bubbles.

  9. Slice, serve, and enjoy.
